Vegan Coffee Cake | Coffee Cake is the Best to Bake

This is a soft, moist, and tasty coffee cake with streusel cinnamon topping for vegans! This simple to make is mouthwatering and amply fulfills your desire for a "rich buttery" cake. Nothing beats a fresh, homemade, out-of-the-oven cake that fills your house with its comforting, sweet brown sugar and cinnamon aroma. It is a must-have food to be enjoyed with a freshly brewed cup of coffee or tea.

It is a favorite go-to dessert for any occasion, be it birthdays, dinner parties, showers, or just to have something simple as well as sweet to be eaten as an evening snack. The coffeecake vegan recipe is plant-based (that means no eggs, no dairy product, no gluten) and is free of refined sugar. It is ideal for breakfasts and much more popular in America than in other countries.

What basically is an Espresso Cake?

It is a basic, delicate cake layered with cinnamon, brown sugar, and walnut streusel. It is soft and moist that has a sweet streusel finished topping. It is similar to "Streuselkuchen," which is a German coffee cake.

To your surprise, a coffee cake does not actually have coffee in it. Because coffee does not easily dissolve in the mixture, the coffee granules remain floating in the mixture and give it a bitter taste.  (Still, you can add that if you want to). Yet, the reason to take it as a coffee cake is that it perfectly complements your sweet cravings with a cup of coffee. It has a crumbly topping, typically containing cinnamon, with a dash of nuts and (at times) fruits, like an apple. Coffee cake is a reason to drink coffee and coffee reasons to eat coffee cake!

How to Make Vegan Coffee Cake?
The coffee cake vegan recipe can be summarized as follows:

  • Blend cake batter's wet ingredients and set aside.
  • Secondly, mix cake batter's dry ingredients and combine them with wet batter. Mix finely.
  • Mix all crumble ingredients by hand and make crumble.
  • First, add cake mixture to the baking pan topped by cinnamon streusel and put to bake.
  • Sprinkle sugarcoat over the cake once baked and serve.

Easy Vegan Coffee Cake Recipe

Coffee cakes have the edge over other cakes due to their streusel topping. These cakes do not need any sort of icing or frosting and, therefore, are much easier. Streusel is the top layer of this cake, in addition to some glaze that is poured over. Otherwise, it is a basic sponge cake. The crunchy, crumbly topping makes all the difference. Therefore, it is essential to make the perfect streusel by properly blending all the ingredients and butter chunks.

  • 1½ cup of all-purpose flour
  • 1 cup of brown sugar
  • 1 teaspoon of baking soda
  • ¼ teaspoon of Salt
  • 1 tablespoon of powdered cinnamon

Wet Ingredients

  • 1 Tablespoon of white vinegar
  • 1 cup of almond milk
  • ? cup of canola oil

For Cinnamon Streusel

  • ¾ cup of brown sugar
  • 1 cup of all-purpose flour

  • ? cup of vegan margarine/ vegan butter

For Sugar Glaze

  • 2-3 tablespoons of almond milk
  • ½ cup of caster sugar

Directions

  2. For the cake, add oil, almond milk, and vinegar in a bowl and mix well. Put it aside. In a medium-sized bowl, combine together the flour, baking powder, sugar, baking soda, salt, and cinnamon powder.
  3. Prepare a milk mixture and add it to it. Mix until well combined. Pour the mixture into the prepared baking dish.
  4. To make the streusel, start by adding brown sugar, flour, salt, cinnamon powder, softened vegan butter, and chopped walnuts. Combine well with hands.
  5. With this cinnamon streusel, evenly layer the cake batter wrapping the whole area.
  6. Put to bake for up to forty to forty-five minutes. Check with a skewer until it comes out clean from the middle of the cake. When done, put it to cool on a cake rack.
  7. For the sugar coat, mix caster sugar with almond milk. Gradually keep adding almond milk while blending and check the consistency mixture of t. few drops of vanilla essence could also be included at this point for flavor.
  8. Glaze the cake by drizzling a liberal amount of sugar syrup over the cake. When set, serve. It tastes better when warm.

Directions on How to Serve and Store the Cake

  1. This cake is better served warm because it is softer this way. It can be stored at room temperature for a couple of days without a fridge. Or it can stay fresh in the fridge for around seven to ten days.
  2. Make it mildly warm in the microwave before serving. This way, its flavor becomes more appealing and flavorful. Also, it turns softer.
  3. Serve it alongside a hot teacup or coffee.

Recipe tips and notes

  1. Almond milk can be substituted by oats milk or soy if you are an allergen to nuts and need to make it free of nuts. What's more, pecans can be substituted with raisins, chocolate chips, or coconut flakes.
  2. You can double the fun and flavor by doubling the quantity of batter and make a streusel layer in the middle!
  3. For a healthier version, use whole grain and make it with wheat flour instead of white flour.
  4. This cake can also be turned into tasty muffins, cupcakes, or round or square shapes by using different shaped baking trays.
  5. Sifted and measured flour gives better results. So make exact measurements and sift the flour.
  6. This recipe can also be made by using vegetable oil. You can use canola oil or extra virgin olive oil, or any other of your choice. Melt first, if using coconut oil.
  7. To make it completely gluten-free, use gluten-free white flour instead of the regular flour. But make sure to increase the oil quantity then, by taking it to half a cup from one third.
